Melon Smoothie

This vitamin c and potassium packed smoothie is delicious and approved by my four year old!  With hydration from the cucumber and oil lubricants for the organs..this frothy drink makes for a tasty smoothie.  I didn't peel the cucumber because that's where most of the nutrients are, but if you prefer less pulp you may want to do so. 
Melon Smoothie

1/2 cantaloupe, or honeydew diced (about 2 cups)
1/2 cucumber diced
1 tablespoon flax seed oil (this is optional, the smoothie is great even without it but it does make the smoothie a little frothier)



Place all ingredients in the blender and blend on high for about 1-1 1/2 minutes.  You may need to add a tablespoon of water to get your blender started.

If you can get past the color, etc...I promise once it touches your lips you will be pleasantly surprised.  After all, my four year old son asked for seconds! Another Diana Sobo recipe
