FLEXITARIAN - what is it?

OK, I must really be behind on "today's" terms.  As I was reading my Mother Earth News magazine today I came across the word/term  "Flexitarian".  So, what is a Flexitarian?

A Flexitarian is the new term that refers to people who eat a predominantly vegetarian diet and they eat much less meat than typical omnivores.  And..when they do eat meat, they usually opt for healthy, humanely raised selections and may make exceptions for special occasions or when dining as someones guest.

So here's to you Mr. and/or Mrs. "Flexible" eater for being conscious about food issues and for making wise choices for yourselves and the environment as you find new ways to "define" complete, healthy meals.
