Fresh Apple Muesli with Maple-Pecan Cream

Yes, I know...it's about time I got back on the horse!  So, here I am continuing to battle with my food addiction with trials and failures...but never giving up!

Today started with a great 30 minute spin routine and super fruity nutritious breakfast with recipe by Diana Stobo. 

As you know fruit is one of the greatest ways to start your day!  It's great for your digestive tract. 

I have to tell you that this tasted more like a treat with each and every crunchy sweet bite!  And it didn't hurt that it gave me a real energy boost to boot!

Fresh Apple Muesli with Maple-Pecan Cream
Makes 1-2 servings

1 apple cored and diced
1/4 cup whole raw almonds
1 tablespoon raisins
1/4 tsp cinnamon
1 pinch of sea salt


 


Place all ingredients in your food processor (with "s" blade) and pulse until all ingredients are coarsley chopped to your desired consistency.  (ie..if you want crunchier pulse less, smoother pulse longer).  Transfer ingredients to a bowl. Top with Maple-Pecan Cream.



Maple-Pecan Cream

1/2 cups pecans
1/2 cup water
2 tablespoons of maple syrup

Blend all ingredients in blender until smooth and creamy.  You can keep extra cream in refrigerator for up to 5 days and it can be used as a dip or other dessert. 



So GOOD and so GOOD for you!


Did you know that the vitamin c content of an apple can be measured by it's tartness?  That's right, the more tart an apple, the higher the vitamin C.
